I make a large casserole because my sons decimate this dish. With the chips it doesn't reheat very well. They just turn kind of soggy. If you don't need this much, only use half the ingredients. (If you don't want half a can of beans left over, you can just put the whole can in, it won't make much difference. Same with the taco seasoning.)

Ingredients

20-25 minutes

  1. 2 lbslean ground beef
  2. 1onion, chopped
  3. 1 Csour cream
  4. 2 cansRotel, undrained
  5. 1small can sliced black olives, drained
  6. 1 packettaco seasoning
  7. 1 (15 oz)can refried beans
  8. 3 Cshredded cheddar cheese
  9. 1large bag tortilla chips

Cooking Instructions

20-25 minutes

    Heat oven to 350°

    In a large skillet,cook beef and onions until onions are soft and meat is cooked through. Drain and return to skillet.

    Stir in Rotel, sour cream, olives, taco seasoning, and beans.

    Simmer over medium heat for 10 minutes

    Coarsely crush half the chips into a 10x14" casserole dish.

    Spoon half the meat mixture over chips.

  7. 7

    Sprinkle half the cheese over the meat.

    Repeat chip and meat layers.

  9. 9

    Bake 20-25 minutes, until heated through.

  10. 10

    Top with remaining cheese and bake 5 more minutes, until cheese is melted.
