At Home Sausage McMuffins
A guilt free way to enjoy McDonald's breakfast WITH OUT the crazy calories!
Cooking Instructions

Preheat oven to 350 and spray a muffin tin with non stick cooking spray

Preheat griddle to 350 or heat up a frying pan, George foreman, whatever you cook your sausage in!

Crack 6 eggs, or however many people are eating and put in muffin tin slots. Season to taste and place in oven for 15 minutes.

In the mean time, slice sausage roll in to about 6 slices and fry up until cooked through.

Toast your muffins, or butter the inside and place, butter side down, on griddle or frying pan and toast slightly.

Now for assembly!

Place cooked sausage patty on prepared muffin, then cheese slice, then egg, and place other muffin half on top. ENJOY!

Eight different sausages from one pound of ground meat patties, pork or lamb. You can make American, Andouille, Italian Mild, Italian Spicy, Latin American Chorizo, Bratwurst, Kielbasa, South African “ boerewors”, Breakfast, and Goa Sausage by just adding a pinch of the right spices and 1/2 tsp flavoring at the time you cook them.Make 1/2 inch thick organic patties, eight per pound, ( the size of a McDonalds burger) as big as a wide mouth mason jar. Freeze them individually between wax paper, cook and season them frozen without thawing for breakfast, soups, sauces and dinners. Just make sure you use an internal probe thermometer and cook meat to 160F degrees inside.You sprinkle the spices on top of the frozen meat, and sandwich another frozen patty on top, to make an inch thick special sausage. We all have our odd guilty pleasures, right??? :DI mean, I generally don't love fast food, but sometimes there is something inexplicably appealing about certain menu items, and for some reason, the Hubs, Firstborn, and I all think McRibs are really tasty in that unwholesome fast food kind of way.So anyways, one day, when McRibs were just out of season and we were still craving some and I was biting into an Eckrich smoked sausage with its oddly softspringyspongy texture, and something about that texture mixed with the generally porky flavor of it made me think I could make a McRib knockoff with it.So I tried it, and even though it's obviously not the exact same thing, Hubs, Firstborn, and I all agreed that it satisfied our off (McRib) season cravings.You don't HAVE to use Eckrich, but there is something distinctly appropriate about it for this purpose. I've also used Hillshire Farms in a pinch.And also, you don't have to use Kraft BBQ sauce, but I find it tastes a lot like McD's. Bullseye and Sweet Baby Rays also seem to work well. You don't want anything too artisanal or interesting for this sandwich - something really cheap, commercial, and basic. We *are* trying to copy McDonald's here... :PIf you try it, lmk what you think. ;) x -
