Sausage Mini Muffin Pancakes

Light bite size pancake mini muffins with a homemade pancake batter. A sausage center gives them a delicious twist. Dip them in warm maple syrup for a breakfast treat or snack. We served them at a football gathering and they were the first snack gone! They freeze really well, just cool before freezing and reheat briefly in the microwave.

Preheat oven to 425.spray mini muffin pans with bakers spray

Combine flout, baking powder,sugar and salt, whisk to blend

In a large bowl add milk and lemon juice and let sit for 1 minute

Whisk in egg, butter and vanilla
- 5
Stir in flour mixture until mostly smooth, the batter will be thin don't be tempted to add more flour, they puff up tender and light in the oven

Fill mini muffin pans 2/3 full with batter

Drop a sausage slice in each center

Bake for 8 to 9 minutes until golden and a toothpick comes out clean

Let cool in pans 1 to 2 minutes then remive from pans

Serve with warm maple syrup for dipping
