Cooking Instructions

COOK NOODLE,,,, bring water to a boil then add soy noodle simmer for 3 minute then drain add 1 tbsp of oil and set aside

in pan with oil saute garlic and ginger for 1 minute then add red chili and thinly sliced beef saute till 90 percent cooked

add FLAVOUR SAUCE OPTION A and cooked soy noodle mix well

add shao xing wine then mix well then add coriander leaf and off heat and serve immediately

Being a Taiwanese person abroad, you often miss perhaps one of the most famous dishes in Taiwan--Beef Noodle Soup. While I was living in smaller communities abroad (like London, Ontario and Aachen, Germany), I often had really bad cravings for beef noodles so I searched high and low for an easy but delicious recipe of the popular dish. This recipe comes from a famous Taiwanese chef Meixian Lee (李梅仙). Even though I live in a much bigger city (Toronto) now and have access to lots of Taiwanese restaurants, I rarely find myself needing to go to them for beef noodle soup as this recipe is as good as it gets!Most of the ingredients here can be bought at your local Chinese grocer and are sometimes available in the international aisle at your regular grocer. The important components to the tastiest pot of beef & noodles are the rich broth, the right noodles, and low, slow cooking.NOTES:The broth ingredients may sound a bit odd, but trust me; it'll be SO flavorful! The addition of the red wine vinegar makes salt unnecessary....DON'T add salt!....and it tenderizes the beef. There won't be any vinegar flavor in the finished dish.Cut your stew beef pieces in fourths. You want them smaller for more uniform distribution with the noodles.DON'T substitute a different brand noodle.
