  1. 1 tbspOlive Oil
  2. 1 lbGround Turkey
  3. 15 ozCan of Tomato Sauce
  4. 2 cupSalsa
  5. 2 cupCooked Elbow Pasta
  6. 1Roma Tomato (diced)
  7. 1 cupCorn Kernels
  8. 1 cupCanned Black Beans (rinsed)
  9. 1/2 cupShredded Cheddar Cheese
  10. 1Avocado (halved, seeded, peeled and diced)
  11. 2 tbspChopped fresh Cilantro leaves

  1. 1

    Heat olive oil in a sauce pan over medium high heat. Add ground turkey and cook until browned, about 3-4 minutes, making sure to crumble the turkey as it cooks, drain excess fat.

  2. 2

    Stir in tomato sauce and salsa until well combined. Add pasta, tomato, corn and black beans, and gently toss to combine.

  3. 3

    Stir in cheese until melted through, about 1-2 minutes.

  4. 4

    Serve immediately, topped with avocado and cilantro.
