I had some coconut milk left from my chia pudding that i did not use and i said to myself let's improvise and turned out delicious.
PS. You can add chili flakes if you like it spicy!!

Cooking Instructions

Boil the rice for 10 minutes then drain the water.

Cut the mushroms and put then in the hot pan with some salt

Cut the chicken breast small pieces and mix it in a bowl with a little salt, the lemon juice and 5 tablespoons of coconut milk and place it in the pan with the mushroms for 3-4 minutes

Add to the pan the coconut milk and the rice and mix well and let it boil on medium heat for 10 minutes then high heat so that the excess liquit to evaporate and done.

This is inexpensive, but rich and flavorful. I use whatever i have on hand for the chicken broth, I'll use homemade, canned or bouillon and water, it all works really well. I use extra long grain rice from La Preferida Brand, because it gets so creamy. I make some green beans with onion to serve with it, cuz I like to mix it together! nanarenee
