Ingredients

5 servings
  1. 1loaf premium Italian bread ( I used OROWEAT),cut into 1" cubes
  2. 2 cupFresh blueberries
  3. 1/4 cupShredded coconut
  4. 5Large eggs
  5. 1 1/2 cupCoconut milk
  6. 1/4 cupmesquite honey
  7. 1Zest of 1 lemon
  8. 2 tbsplemon juice
  9. 1 tspcinnamon
  10. 1 tbspvanilla

Steps

  1. 1

    Preheat oven to 350°F. In a large mixing bowl, toss bread cubes, coconut, and blueberries.

  2. 2

    Place in a large baking dish.

  3. 3

    In a medium bowl, whisk eggs, coconut milk, mesquite honey, lemon zest, lemon juice, cinnamon and vanilla.

  4. 4

    Pour mixture evenly over bread in baking dish.

  5. 5

    Bake for 45 minutes, or until golden brown. Serve with boysenberry syrup.
