I wanted to eat this dish but was too lazy to make the curry paste from scratch. Using red curry paste works just as well and is delicious!

I wanted to eat this dish but was too lazy to make the curry paste from scratch. Using red curry paste works just as well and is delicious!

Cut the tomatoes in half and slice the green onions and cilantro. Set aside.

Heat a pan over medium heat and add the oil. Sauté the garlic until fragrant and slightly golden, then add the curry paste and stir until aromatic. Add the ground pork and stir to combine, followed by the tomatoes and a little boiled water. Stir everything together.

Season with fish sauce and sugar. Finish with sliced green onions and cilantro. Taste and adjust for a salty and spicy flavor. Serve in a bowl with pork rinds and cucumber on the side 😉
