Ingredients

  1. 2 cupsall-purpose flour (250 g)
  2. 1/2 teaspoonground cinnamon
  3. 1/2 teaspoonground nutmeg
  4. 1/2 teaspoonground ginger
  5. 1/2 cupalmond flour (50 g)
  6. 7 tablespoonsunsalted butter, softened (100 g)
  7. 1 packetbaking powder (about 2 teaspoons)
  8. 2/3 cupgranulated sugar (125 g)
  9. 1large egg
  10. 1lemon

Steps

  1. 1

    Mix all the ingredients together.

  2. 2

    Knead the dough using a stand mixer or by hand.

  3. 3

    Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 1 hour.

  4. 4

    Roll out the dough to about 1/4 inch (1/2 cm) thick.

  5. 5

    Cut out shapes with cookie cutters and place them on a baking sheet lined with parchment paper.

  6. 6

    Lightly brush with beaten egg.

  7. 7

    Bake for 12 minutes at 350°F (180°C).

  8. 8

    Let cool and store in a metal tin.
