I usually like meatballs in broth, but they're delicious in sauce too. This is a great way to change up how you prepare ground meat.

I usually like meatballs in broth, but they're delicious in sauce too. This is a great way to change up how you prepare ground meat.

In a bowl, combine the ground beef, egg, and garlic powder. Mix well by hand.

Blend the tomatoes, onion, chipotle pepper, garlic, water, and flour until smooth. The flour helps thicken the sauce.

Form the meat mixture into balls, placing a cube of cheese in the center of each. Roll to seal the cheese inside.

Heat a skillet over medium heat. Add the meatballs and turn them until browned on all sides. Once all are browned, pour in the sauce, cover the skillet, and bring to a boil. Reduce the heat and simmer for 5 to 10 minutes, until fully cooked.

You can use any cheese you like. I only added one chipotle pepper to the sauce because the cheese was already spicy. They turned out delicious.
