Heat oil in a pan and crackle mustard seeds and jeera

Add Turmeric powder and red chilli powder, saute for a while

Add chopped Carrot and green

Adjust salt, mix well and cook covered for some time

Now add methi leaves and chopped tomato, mix well and cook uncovered

Check and turn in between.

Cook till Tomato becomes soft and a homogeneous mixture

Lastly garnish with coriander and flavourings sabji is ready to serve with Phulkaz or Puri / paratha
