Ingredients

  1. 1 cupblack-eyed beans (chawli)
  2. 1/2 cupchopped spinach (palak)
  3. 1/2 cupchopped fenugreek (methi) leaves
  4. 1/4 tspasafoetida (hing)
  5. 1 tbspginger-green chilli paste
  6. to tastesalt
  7. 2 tspfruit salt
  8. 2 tspoil
  9. as neededFor Serving green chutney

Steps

    Wash and soak the beans in enough water for at least 8 hours. Drain.Combine

  2. 2

    The soaked chawli and approx. ¾ cup of water in a mixer and blend till smooth

  3. 3

    .Transfer the mixture into a deep bowl, add all the remaining ingredients,

  4. 4

    Except the fruit salt and mix well.Just before steaming, add the fruit salt and 1 tbsp of water and mix gently.

  5. 5

    Pour half the batter into a greased 175 mm. (7”) diameter thali.Steam in a steamer for 12 minutes

  6. 6

    Or till the dhoklas are cooked.Cool slightly and cut into equal pieces using a sharp knife

  7. 7

    Repeat steps 5 to 7 to steam one more batch.Serve immediately with green chutney.
