Delicious, crispy, fried palak leaves chat is one of my favorite dish. during fasting dayes loves to make any dish with spinach. spinch is healthy veggi. spinch leaves coated with water chestnut flour along with little spices deep fried in the oil. serve with whipped curd, tamrind chutney, green chutey, roasted cumin powder and red chilli powder. Normally we dont make chat in any fasting days but spinanch leaves chat is the best option for fasting. hope you all love this recipe.

Ingredients

  1. For batter:-
  2. 16 to 20Spinach leaves medium size
  3. 1/1/2 cupSinghade ka atta
  4. Sendha namak as per taste
  5. 1 tspRed chilli powder
  6. 1 tbspCoriander powder
  7. 1 tbspGinger paste
  8. Oil for frying
  9. For serving:-
  10. 1/2 kgWhipped curd
  11. 2 tbspSugar powder
  12. 1 tbspRoasted cumin powder or as required
  13. Red chilli powder as per taste
  14. Green chutney as required
  15. Tamarind chutney as required

Steps

  1. 1

    Take water chestnut flour in a large bowl, add salt, singer paste, red chilli powder and coriander powder. make a thin batter, rest the batter for a while
    Tie yogurt in muslin cloth and remove the excess water, squeeze out the curd into a large bowl then add sugar mix well keep a side.
    Wash and dry the spinach leaves with muslin cloth.

    Heat oil in a pan coat each leaf with batter on both side, deep fry in medium hot heat till golden and crisp. Drain on absorbent paper.
    Place 4-5 fried spinach in a serving plate, cover with whisked curd, drizzle some sweet and green chutney.
    Sprinkle red chilli powder and cumin powder.

    You can either use Kuttu or Rajgira flour, as per choice.
