Vangi bhat (Brinjal masala rice)

In a big kadai add oil add whole garam masala saute for a min.

Add coarse green paste saute for 2 mins. Add onions and saute till gets translucent. Add god's masala and malvani masala and salt. Keep stirring

Add all vegetables and saute till veggies turns soft. Add tomatoes and cover.

Add curd and stirr again. Let it mix together then add soaked rice and mix well. Fry for a min.

Add hot boiled water (double the qty of rice)

Mix well and cover. cook over a medium heat. Turn off the gas when done. Sprinkle chopped coriander over the rice.
