Ingredients

4 servings
  • Patty Mix
  • 1 lbground lamb *or lean ground beef
  • 1/2 cupcooked spinach, squeezed dry and chilled
  • 1/2 cupfeta cheese
  • 2 clovesgarlic, minced
  • 1 tablespoonchopped fresh oregano, dill, and parsley
  • 2 teaspoonsground cumin
  • 1egg yolk
  • 1/2 teaspooncayenne
  • Yogurt Sauce
  • 3/4 cupplain Greek yogurt
  • 1/4 cupchopped cucumber
  • 1 tablespoonhoney
  • 1 teaspoonlemon zest
  • Juice of 1 lemon
  • 1 teaspoonchopped dill
  • 1 teaspoonchopped mint
  • to tasteSalt and pepper
  • Serve With
  • Toasted ciabatta buns, sliced tomato, cucumber, and red onion
  • Or- on a wilted spinach salad with diced tomato, cucumber

Steps

  1. 1

    Combine all patty mix ingredients in a bowl. Do not over work the mix.

  2. 2

    Form four patties and refrigerate 10-15 minutes

  3. 3

    Heat 1 tablespoon olive oil on a medium high heat skillet, cook burgers 3-5 minutes per side to desired doneness. *if using bison DO NOT cook beyond medium or it will be dry!

  4. 4

    Served drizzled with yogurt sauce
