  2. 4guajillo chiles (or similar dried red chiles)
  3. 3ancho chiles
  4. 1dried chipotle chile
  5. 1 pieceonion
  6. 3whole cloves
  7. 15black peppercorns
  8. 0.7 ounceachiote paste (about 20 grams)
  9. 2garlic cloves
  10. 1/4 cupwhite vinegar (60 ml)
  11. Kosher salt, to taste
  12. 1/2 teaspoondried marjoram
  13. 1/2 teaspoonground thyme
  14. 1/4 teaspoonground cumin
  15. 1/2 cupsour orange juice (120 ml) or a mix of orange and lime juice
  16. For serving:
