Dissolve the yeast and sugar in the warm water

Add to the flour and salt

Mix well

Leave to stand for approx. 45 min

Dissolve the bicarbonate of soda in the water

Add to the dough/mix

Leave to stand for about 30 min

Heat a frying pan to a medium heat and add a little bit of fat

Fill crumpets rings about 1/3 full with mix

When the top is no longer liquid, turn them over for another short while

Serve hot or toast them later

I made these when I ran out of bread for breakfast.They are easier to make than baking bread, and I like them as they are not as sweet as normal pancakes.I added roasted wheat germ, because my daughter and I love the fragrant smell!!You can just roughly mix the mixture with a whisk.When you fry the crumpets, they won't rise much if the temperature is too low. So fry them over medium heat, but make sure not to burn them!They are light and not so sweet, so they are perfect for breakfast!I think they are more delicious if you add the wheat germ, as they have a nice fragrant smell and you can enjoy them right to the end!
