Ingredients

25 skewers
  • 1.1 lbsbeef skin (kikil)
  • 3bay leaves
  • 1 stalklemongrass
  • 1small piece palm sugar
  • 1 piecegalangal
  • 1 teaspoonsugar
  • 1 1/2 teaspoonssalt
  • 3 tablespoonssweet soy sauce
  • as neededSkewers
  • 1 packetbeef bouillon
  • Spice Paste:
  • 6shallots
  • 4 clovesgarlic
  • 5red chilies
  • 3bird's eye chilies
  • 3candlenuts
  • 1/2 teaspooncumin
  • 1 teaspoonpepper
  • 1 teaspoonground coriander
  • 3kaffir lime leaves

Steps

  1. 1

    Sauté the spice paste, add bay leaves, lemongrass, and galangal, then add water and palm sugar.

  2. 2

    Stir until the palm sugar dissolves, add sugar, salt, sweet soy sauce, and beef bouillon. Taste and adjust seasoning, add the beef skin, stir until combined, and let it simmer until the liquid reduces. Taste the beef skin, and if it's cooked to your liking, turn off the heat.

  3. 3

    Let it cool slightly, skewer the pieces, and serve.
