Stir until the palm sugar dissolves, add sugar, salt, sweet soy sauce, and beef bouillon. Taste and adjust seasoning, add the beef skin, stir until combined, and let it simmer until the liquid reduces. Taste the beef skin, and if it's cooked to your liking, turn off the heat.

Bali is the most famous island in Indonesia for the rest of the world. And its most popular dish is probably "sate lilit". Literally "lilit" means to wrap. Lemongrass stem or bamboo skewer is wrapped with fish, chicken, or even turtle flesh, seasoned with bumbu base ganep.Bumbu base ganep is Balinese philosophical seasoning mix made out of garlic, shallots, white galangal, tumeric, ginger, black galangal, candlenut, lemongrass stem, chili, palm sugar, salt, shrimp paste, and oil. In Balinese belief, cooking is an act of worshipping and thanking for the good life, thus each of the herbs represents one god.Since I discovered that the toko near me has these herbs, I happily experimented with this dish. This satay is one of traditional dishes in West Java province. Usually, other satays use peanut sauce. Since the meat is marinated for at least an hour (overnight, in my case), this kind of satay is already savory. Usually we eat this with sambal and acar tomat (pickled tomatoes) and steamed rice. This is originally from Bali. I've never been to Bali myself, but I did ask around and did a mini research of how this should taste.It all started when my mom visited me and brought 3 fillets of Tenggiri (Big Mackerel). At that week I was craving sate lilit after watching a culinary program on tv.This is my first time making this dish and it tasted quite awesome. I followed the simpliest recipe by ditching some spices that I don't think needed much (a judgemental side of me you have to deal with). Every family has their own version so the rule is there is no rule. You can use fish or chicken, even my friend said she use tofu for vegan option.As a javanese person like me, this dish turned out to be not sweet enough.
