Sate Lilit Bali (Indonesian Balinese Fish satay)

Bali is the most famous island in Indonesia for the rest of the world. And its most popular dish is probably "sate lilit". Literally "lilit" means to wrap. Lemongrass stem or bamboo skewer is wrapped with fish, chicken, or even turtle flesh, seasoned with bumbu base ganep.

Bumbu base ganep is Balinese philosophical seasoning mix made out of garlic, shallots, white galangal, tumeric, ginger, black galangal, candlenut, lemongrass stem, chili, palm sugar, salt, shrimp paste, and oil. In Balinese belief, cooking is an act of worshipping and thanking for the good life, thus each of the herbs represents one god.

Since I discovered that the toko near me has these herbs, I happily experimented with this dish. However I didn't use all of the herbs since I think it would be too strong for my Dutch husband's tongue.

I used the fragrant lemongrass stems as the accent of the dish's aroma.

Ingredients

  1. 700 grpangasius fillet
  2. 2garlic
  3. 4shallots
  4. 2candlenut
  5. 3 cmginger
  6. 1 teaspoontumeric powder
  7. 1 teaspoongalangal powder
  8. 1 teaspoonblack galangal powder
  9. 30 grdried grated coconut
  10. Salt
  11. 10lemongrass stems

Cooking Instructions

    Put all of the ingredients in the food processor, except for the lemongrass stems. Feel the texture. It should be sticky and easy to be molded.

    Wrap the lemongrass stems with the minced fish.

    Pre heat the oven into 180 c degree. When it's heated, put the fish satay in and set the timer for 25 minutes.

    Bake the fish in the oven. You might want to flip them on the last 10 minutes.

    Smell that inviting lemongrass aroma from your oven? That means your satay lilit is done!

    Tip for a more exotic experience: enjoy your satay lilit with "sambal matah" (chopped chilies, shallots, salt, and lemongrass powder showered in hot olive oil). This sambal is really hot! My husband would describe this exotic experience as "a kind of pain" 😉😅
