Sate Lilit Bali (Indonesian Balinese Fish satay)

Bali is the most famous island in Indonesia for the rest of the world. And its most popular dish is probably "sate lilit". Literally "lilit" means to wrap. Lemongrass stem or bamboo skewer is wrapped with fish, chicken, or even turtle flesh, seasoned with bumbu base ganep.
Bumbu base ganep is Balinese philosophical seasoning mix made out of garlic, shallots, white galangal, tumeric, ginger, black galangal, candlenut, lemongrass stem, chili, palm sugar, salt, shrimp paste, and oil. In Balinese belief, cooking is an act of worshipping and thanking for the good life, thus each of the herbs represents one god.
Since I discovered that the toko near me has these herbs, I happily experimented with this dish. However I didn't use all of the herbs since I think it would be too strong for my Dutch husband's tongue.
I used the fragrant lemongrass stems as the accent of the dish's aroma.

Cooking Instructions
- 1
Put all of the ingredients in the food processor, except for the lemongrass stems. Feel the texture. It should be sticky and easy to be molded.
- 2
Wrap the lemongrass stems with the minced fish.
- 3
Pre heat the oven into 180 c degree. When it's heated, put the fish satay in and set the timer for 25 minutes.
- 4
Bake the fish in the oven. You might want to flip them on the last 10 minutes.
- 5
Smell that inviting lemongrass aroma from your oven? That means your satay lilit is done!
- 6
Tip for a more exotic experience: enjoy your satay lilit with "sambal matah" (chopped chilies, shallots, salt, and lemongrass powder showered in hot olive oil). This sambal is really hot! My husband would describe this exotic experience as "a kind of pain" 😉😅

Sate Lilit (Satay Lilit Bali) Sate Lilit (Satay Lilit Bali)
This is originally from Bali. I've never been to Bali myself, but I did ask around and did a mini research of how this should taste. It all started when my mom visited me and brought 3 fillets of Tenggiri (Big Mackerel). At that week I was craving sate lilit after watching a culinary program on tv.This is my first time making this dish and it tasted quite awesome. I followed the simpliest recipe by ditching some spices that I don't think needed much (a judgemental side of me you have to deal with). Every family has their own version so the rule is there is no rule. You can use fish or chicken, even my friend said she use tofu for vegan option. As a javanese person like me, this dish turned out to be not sweet enough. Hence I even dipped it in sweet soysauce sambal 😂 Balinese people usually make sambal matah for a condiment. If you make the sate in mini one bite size, I think this is perfect for appetizer 😉If you recook it, please share and let me know 🙆 Indah NQ Ahmed -
Mini Sate Maranggi -- Marinated Indonesian Satay Mini Sate Maranggi -- Marinated Indonesian Satay
This satay is one of traditional dishes in West Java province. Usually, other satays use peanut sauce. Since the meat is marinated for at least an hour (overnight, in my case), this kind of satay is already savory. Usually we eat this with sambal and acar tomat (pickled tomatoes) and steamed rice. I like to use mini skewers for this one, but of course you can use regular-sized skewers. You can grill this satay but you can also cook sate maranggi in a pan. This is my version of sate maranggi. Sweet satay (sate manis) Sweet satay (sate manis)
sate in Indonesian spelling, is a Southeast Asian dish of seasoned, skewered and grilled meat, served with a sauce. It is a dish from Indonesia; and popular in Malaysia, Singapore, and Thailand.Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats, or tofu; the more authentic version uses skewers from the midrib of the coconut palm frond, although bamboo skewers are often used. These are grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings. Satay can be served in various sauces, however most often they are served in a combination of soy and peanut sauce. Hence, peanut sauce is often called satay sauce. Kezia's Kitchen 👩🍳 -

I had this in Bali! Satay! Indonesian Yakitori I had this in Bali! Satay! Indonesian Yakitori
I was wondering what type of dish would go well with the nasi goreng (Indonesian fried rice) that I had made and then I thought of this satay! The marinade and dipping sauce are all approximate amounts, so adjust the richness and whatnot to suit your tastes! The ingredients can be found at the import store 'Kaldi.' There really aren't any special tips. Just marinate well before grilling! If you don't have a yakitori grill, you can use a fish grill or a regular grill, or even the frying pan! For 2 servings.
