Chouriço & Bean Casserole

Ingredients

45 minutes
  1. 6 Cansbeans (Navy Beans or Northern Beans)
  2. 2 LinksChouriço (hot or mild)
  3. 1 1/2 cupolive oil
  4. 1/2 cuptomato sauce
  5. 2 tablespoontomato paste
  6. to tasteGarlic powder
  7. 1onion chopped

Cooking Instructions

    Place Beans in a drainer. Rinse with cold water. Let it drain until ready to go into pan.

    Prepare Chouriço. Remove casings and then pull apart into pieces.

    In a large pan, sauté chopped onion with olive oil until slightly golden in color. Add the prepared chouriço. Cook for about 5 minutes on medium heat. Stir occasionally.

    Next, add the tomato sauce, tomato paste and garlic powder. Stir well until tomato paste has dissolved.

    Add drained beans. Carefully fold with chouriço. Then let it simmer for about 5 minutes on low heat. Stir occasionally.

    Place into baking dish. Sprinkle with a bit of olive oil. Cover with foil wrap.

    Place in the oven at 350 for 20 - 30 minutes.
