Ingredients

2 servings
  • 4 ozuncooked angel hair pasta
  • 8 ozjumbo shrimp, shelled and deveined
  • 6fresh asparagus spears, trimmed and cut into 2 in pieces
  • Olive oil
  • 1-2garlic cloves, minced
  • 1/2chicken stock
  • 1/2 cupsliced mushrooms
  • 1-2tomatoes, chopped
  • to tasteSalt and pepper
  • 1/8 tspred pepper flakes
  • 3fresh basil leaves, chopped
  • Juice of 1 lemon
  • 1/4 cupparmesan

Steps

    Cook pasta according to package directions.

  2. 2

    Meanwhile, in a large skillet, saute shrimp and asparagus in oil for 3-4 minutes or until shrimp turn pink. Add garlic; cook 1 minute longer. Add the mushrooms, broth, tomato, salt and pepper flakes; simmer, uncovered, for 2 minutes.

    Drain pasta. Add the pasta, lemon juice, and basil to skillet; toss to coat. Sprinkle with cheese.
