1 lblarge shrimp (peeled, de-veined)
2juice/zest lemons
1 tbspgarlic
1/4 tbspblack pepper
1 tbspcapers
1/2 cupparsley
1/2 tspsalt
1/4 cupolive oil

poach shrimp until pink. cool on ice and drain

whisk together lemon juice, zest, garlic, parsley, salt/pepper, olive oil, and capers.

add them shrimp tossing well, refrigerate at least 1 hour before serving.
