Cooking Instructions

Have butcher or do it yourself cut bones and tie back on roast let roast get to room temperature before cooking.

Put a little oil on roast and mix up spices in a bowl. The oil will help the spices stick to the roast. Rub spices on the roast

Preheat oven to 500 degrees.

Put roast in for 20 minutes.

Take roast out of the oven and let oven cool and set oven for 215 degrees.
- 6
Once it reaches 215 degrees put thermometer in center of roast and cook until temp reaches 125 degrees it should take between 2 and 3 hours.

Take roast out of the oven and let rest for 15 minutes
- 8
Cut off string and serve
- 9
Serve
