Steps

40 mins
  1. 1

Figure out any additional toppings your company may want, such as: cheese, sour cream, salsa, guacamole, jalapeños, etc. This is just the basic recipe. You may add in anything else you might like. Some like these with corn, others like tomato. Hell, my aunt adds Ranch to hers. Find what works for you.

  2. 2

Read up on your specific brand of Spanish rice. If it takes 30 minutes to cook, start it now.

  3. 3

To start off, brown the ground meat in a 12" skillet. When fully cooked, drain out the grease. I normally suggest rinsing out the skillet itself with hot water. Helps prevent future heart attacks.

  4. 4

Add the ground meat back into the skillet. Add in the onion as well. Stir occasionally until the onions are desired consistency. I like mine as brown as they can get, others like them nearly raw.

  5. 5

Stir the taco seasoning mix into 1\2 cup of water. To be honest, I just picked a favorite and added a couple more spices. I'm here to cook, not start my own spice brand. Feel free to substitute for your favorite. Pour the mix into the skillet and stir (I recommend a slotted wooden spoon) so that everything gets an even covering. Sprinkle in the other spices and stir again.

  6. 6

Drop the heat down to low and let the meat simmer for a bit, still stirring occasionally. Open the refried beans and dump them into a small pot. Set these to low and keep an eye on them. You may have to stir frequently to keep them from sticking to the bottom of the pot.

  7. 7

Once the beans are warmed up (and if your rice is ready), cut off the burners. The actual cooking part is done.

  8. 8

To serve, heat 2 tortillas, covered with a damp paper towel, at a time somewhere between 10-30 seconds in your microwave. Take one, slather it with beans, and add the meat and whatever toppings. Don't over-fill this one. Take the second tortilla, give it a layer of rice, and wrap it around the first. This is why they're called double burritos.

  9. 9

These are very filling. A pack of 10 tortillas and rationing the filling accordingly feeds a family of four with one big eater. Be warned: do not eat these before going out unless you have control of the window locks for the ride home.

I'm from New Orleans with a little bit of backwoods in me from my dad's side of the family. We like our food tasty, our beer cold, and having friends over to eat. Hunting and fishing are two favorite pastimes, so there will be a lot of wild game recipes as well as recipes for grills, smokers, etc.Fair warning: we are COOKS, not chefs. We have spices and aren't afraid to use them.
