
Dimer Jhol (Egg curry- bengali style)

Cooking Instructions

Wash and cut the potato in quarters and boil them along with eggs with a pinch of salt.

Peel the egg shells off carefully and with the help of a sharp knife, make 4 longitudinal cuts on all the eggs.

Sprinkle turmeric and salt on them and keep aside while you put the oil to be heated.

Fry the potato chunks and eggs till the potato is golden. Take out and keep aside.

Temper the same oil with the whole spices and once they start sputtering, add the onion paste.

Fry on low heat for 5 mins or till the oil starts oozing out.

Mix in the ginger - garlic paste and cook for another 2-3 mins.

Mix the coriander powder and chilly powder in 1 tbsp. water and add.

Cook for 30 seconds and then add the chopped tomatoes and a little salt
- 10
Cover till the tomato gets soft and mushy ( you cam also mix the spices along with it with your spatula)

Cook for a minute and then add the eggs and potato.

Mix all of them well and pour 1 and 1/2 cups of water.

Check salt and adjust accordingly .

Cover and let it simmer for 5-6 mins.

Sprinkle garam masala before taking out of heat.

Garnish with chopped coriander and serve hot with steamed rice or flat bread.
