Ingredients

3Eggs
1 cupVegitable Oil
2 tspVanilla
2 cupFlour
1 3/4 cupSugar
2 tspCinnamon
1 tspNutmeg
2 cupShredded, strained zucchini (or apples or carrots)
1stick of Butter
1/4 cupBrown sugar
1/2 cupMilk
4 tbspApple butter (or applesauce of thats all you have)

Strain all liquid from zucchini

In a mixing bowl beat together eggs, oil, milk and vanilla

Add flour, sugar (white and brown) , cinnamon, and nutmeg in a sifter

Sift dry ingredients into the bowl

Beat together

Fold in zucchini (or apples or carrots) and apple butter (or sauce)

Pour into greased, floured sheet cake pan

Bake 1 hour at 350°

After removing from oven, while hot, spread butter on top of cake
