Ingredients

  • 3Eggs
  • 1 cupVegitable Oil
  • 2 tspVanilla
  • 2 cupFlour
  • 1 3/4 cupSugar
  • 2 tspCinnamon
  • 1 tspNutmeg
  • 2 cupShredded, strained zucchini (or apples or carrots)
  • 1stick of Butter
  • 1/4 cupBrown sugar
  • 1/2 cupMilk
  • 4 tbspApple butter (or applesauce of thats all you have)

Steps

1 hour 30 mins

    Strain all liquid from zucchini

  2. 2

    In a mixing bowl beat together eggs, oil, milk and vanilla

  3. 3

    Add flour, sugar (white and brown) , cinnamon, and nutmeg in a sifter

  4. 4

    Sift dry ingredients into the bowl

  5. 5

    Beat together

  6. 6

    Fold in zucchini (or apples or carrots) and apple butter (or sauce)

  7. 7

    Pour into greased, floured sheet cake pan

  8. 8

    Bake 1 hour at 350°

  9. 9

    After removing from oven, while hot, spread butter on top of cake
