Ingredients

  1. 125 gramsunsalted butter, chopped, at room temperature
  2. 1 cupbrown sugar, firmly packed
  3. 1 tspvanilla essence
  4. 1egg
  5. 3/4 cuproughly chopped dried apricots
  6. 1/2 cupwhite baking bits
  7. 1/2 cupshredded coconut
  8. 1 1/2 cupself-raising flour

    Line 2 baking trays with baking paper

  2. 2

    Beat butter, sugar and vanilla in a small bowl of an electric mixer until light and fluffy. Beat in egg until combined. Transfer to a large bowl.

  3. 3

    Add apricots, baking bits, coconut and flour. Stir until combined. Roll 2 tblsps of mixture into balls. Arrange about 4 cm apart on prepared trays.

    Cook in moderate slow oven (160ºc) for about 25 minutes, swapping trays halfway through, or until golden brown. Remove.

  5. 5

    Cool biscuits on trays.
