Ingredients

  • 1 cupquinoa flakes
  • 3/4 cupmoist coconut flakes
  • 1/2 cupseed mix
  • 1/2 cupsweetened dried cranberries
  • 1/3 cupbrown sugar, firmly packed
  • 1/3 cuparrowroot (tapioca flour)
  • 1/3 cupcoconut meal
  • 75 gramsunsalted butter, chopped
  • 1/3 cuphoney
  • 2 tbspwater
  • 1 tspbicarbonate of soda
  • 1egg white

    Line 2 large oven trays with baking paper.

  2. 2

    Place quinoa, coconut, seed mix, cranberries, sugar, arrowroot andcoconut meal in a large bowl, mix well.

    Combine butter, honey and water in a medium saucepan. Stir over medium heat until melted. Bring to boil. Stir in soda. Remove from heat. Stir in quinoa mixture until combined. Add egg white. Mix well

  4. 4

    Roll 2 level tblspn of mixture into balls. Place on preparedn trays 4 cm apart.

  5. 5

    Cook in moderate oven (180ºc) for about 20 minutes, swapping trays halfway, or until golden brown. Cool biscuits on trays.
