I often make muffins for breakfast, but was tired of the usual bacon and cheese muffin and bran muffin. This is a nice alternative. You can even add some bran if you like. Just add a little milk then to keep the consistency fairly soft

I often make muffins for breakfast, but was tired of the usual bacon and cheese muffin and bran muffin. This is a nice alternative. You can even add some bran if you like. Just add a little milk then to keep the consistency fairly soft

Preheat oven to 180 C. Spray muffin pan with spray n cook or similar non-stick spray.

Sift together flour, cinnamon, nutmeg, ginger, baking powder.

In a mixer, with the paddle attachment mix the butter and brown and white sugars until creamy.

Add egg. Mix. Add mashed banana. Mix. Add carrot, cranberry and nuts.

Add dry ingredients alternating with milk. Spoon into muffin tray. I make large muffins so this mixture makes 6.

Bake for 30 - 35 minutes
