I often make muffins for breakfast, but was tired of the usual bacon and cheese muffin and bran muffin. This is a nice alternative. You can even add some bran if you like. Just add a little milk then to keep the consistency fairly soft

  1. 2 cupCake flour
  2. 2 tspBaking powder
  3. 1/2 tspCinnamon
  4. 1/4 tspGinger
  5. 1/4 tspNutmeg
  6. 1/4 cupWhite sugar
  7. 1/2 cupBrown sugar
  8. 1/2 cupButter. Room temperature
  9. 1 largeCarrot peeled and finely grated
  10. 2Banana. Mashed
  11. 1 cupNuts, unsalted. Chopped. (I used mixed)
  12. 1Egg
  13. 1/3 cupMilk
  14. 1 cupDried cranberries

Steps

  1. 1

    Preheat oven to 180 C. Spray muffin pan with spray n cook or similar non-stick spray.

  2. 2

    Sift together flour, cinnamon, nutmeg, ginger, baking powder.

  3. 3

    In a mixer, with the paddle attachment mix the butter and brown and white sugars until creamy.

  4. 4

    Add egg. Mix. Add mashed banana. Mix. Add carrot, cranberry and nuts.

  5. 5

    Add dry ingredients alternating with milk. Spoon into muffin tray. I make large muffins so this mixture makes 6.

  6. 6

    Bake for 30 - 35 minutes
