
Banana Bread Granola Bars

Cooking Instructions

Preheat oven to 350°F and prepare an 8 inch x8 inch baking pan by lining it with a sheet of aluminum foil, leaving a few inches of overhang on the sides to allow for easy removal. Grease the foil with cooking spray or oil and set aside.

In a large mixing bowl, combine oats, flax, cinnamon, and salt. Add mashed bananas, honey, and vanilla, mixing until fully combined. Fold in dates.

Pour mixture into prepared baking pan. Using a greased spatula or your hands, spread the mixture evenly in the pan, pressing down firmly.

Bake for 20-25 minutes, until top sets and edges begin to turn golden brown.

Remove from oven and let cool in pan for 10 minutes before cutting into bars with a sharp knife.

My daughter loves granola bars, so we usually have them in the house, but I have yet to find a flavor that I really love. So I decided to try my own mix of ingredients. That's the great thing about homemade granola bars. As long as you stick to the base recipe for the binder (the butter, honey and brown sugar) and the same amounts of ingredients, you can add pretty much whatever ingredients sound good to you at the time. These bars are just the right mix of salty and sweet and keep you filled up between meals. Or they make a good breakfast, served with some fresh fruit. Christina
