Ingredients

  1. 2 mediumsized potatoes - diced
  2. 1Lemon grass stalk.
  3. 4 tbspPuy lentils.
  4. 1 tbspCoconut oil
  5. 1Chopped onion.
  6. 2Chopped garlic cloves.
  7. 6Sliced mushrooms
  8. 1 tspTurmeric
  9. 1 tspGround cumin
  10. 125 gramsGreen beans
  11. 1Chopped yellow pepper.
  12. 1Chopped courgette
  13. 250 gramsFrozen sweetcorn
  14. 300Canned coconut milk.
  15. 1Lime - juice only.
  16. 1 tbspChopped coriander leaves.

Steps

  1. 1

    Boil potatoes, lemon grass and lentils for 15mins.

  2. 2

    Fry onion, garlic, mushrooms, turmeric and cumin until the onion is soft. Add in everything else, bar coriander, and stir well.

  3. 3

    Remove the lemon grass then add the potaotes, onions and water into the pan of fried food.

  4. 4

    Simmer for 10mins then add coriander.

  5. 5

    Serve with brown basmati rice and a vegan naan bread.
