Ingredients

  1. 1 cuponion, chopped
  2. 2 tbspolive oil
  3. 1/2 cupfinely chopped carrots
  4. 1/2 cupfinely chopped celery
  5. lbrinced and picked lentils
  6. 2 tspkosher salt
  7. 1 cuppeeled and chopped tomatoes
  8. 2 quartchicken or vegetable broth
  9. 1/2 tspfreshly ground coriander
  10. 1/2 tspfreshly ground cumin
  11. 1/2 tspfreshly ground grains of paradise

Steps

  1. 1

    Place olive oil in large pot and set over medium heat

  2. 2

    Once the oil is hot, add onion, carrot, celery, and salt and sweat until onions are translucent, approximately 6-7 minutes.

  3. 3

    Add lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine.

  4. 4

    Increase heat to high and bring just to a boil.

  5. 5

    Reduce the heat to low, cover and cook at low simmer until the lentils are tender, approximately 35-40 minutes.

  6. 6

    (Optional) using a stick blender, puree to your preferred consistency.
