I've been making this for years and it's always a hit. East to freeze too. I can't take credit. It's an Alton Brown recipe.

Place olive oil in large pot and set over medium heat

Once the oil is hot, add onion, carrot, celery, and salt and sweat until onions are translucent, approximately 6-7 minutes.

Add lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine.

Increase heat to high and bring just to a boil.

Reduce the heat to low, cover and cook at low simmer until the lentils are tender, approximately 35-40 minutes.

(Optional) using a stick blender, puree to your preferred consistency.
