Cook carrots and sweet potatoes until tender.

Lightly oil a 2 1/2 quart casserole. Arrange carrots, sweet potatoes and prunes in alternate layers, sprinkling each layer with brown sugar. Salt and pepper to taste.

Add water, dot with oil or margarine, and cover. Bake in 350°F oven for 30 minutes, then uncover and bake for another 30 minutes.
