Ingredients

10-15 servings
  • Sift dry ingredients :
  • 2 cflour (e.g. type 65) = 330g
  • 1 1/2 tspbaking powder
  • 1/2 tspbaking soda
  • 1/4 tspsalt
  • Cream wet ingredients :
  • 1 colive oil = 200ml
  • 1 ccane sugar = 200g
  • 100 mlaquafaba (if not available, next ingredient:)
  • 3 tspegg replacer = 9g (e.g. Orgran No Egg)
  • 8 mlvanilla extract
  • Let curdle :
  • 1c=240ml soy milk
  • 1/4 clemon juice = 55-65ml
  • Oven
  • 170Celsius upper+lower heat
  • Finish up :
  • 2 tspgrated lemon peel
  • lined oblong cake pan
  • or
  • 1lined baking sheet with doubled recipe
  • After baking :
  • Lemon Glaze:
  • 1/2 c= 100g cane sugar pulverized (powdered sugar)
  • lemon juice (ca. 2 lemons)
  • 1 tspgrated lemon peel

Steps

  1. 1

    Pulse 1st four dry ingredients at speed7 for 5sec or sift them at your regular method

    Whisk oil and sugar lowest speed till well combined

    Add vanilla, then aquafaba to oil and whisk at low speed 2min longer

    Combine milk and lemon juice and keep lemon peel aside

    At lowest speed add flour in 2-3 steps alternating with curdled milk - don't overbeat!

    Oven at 170°C

  7. 7

    Add lemon peel and combine manually

    Fill dough into lined cake pan

    Oblong coffeecake form: bake in oven for 70min

  10. 10

    Baking sheet w/doubled recipe (!): Oventime 35min

  11. 11

    If baked in medium muffin cases and several baking sheets 160°C hot air oven for 18min

  12. 12

    Top must be slightly browned, not caramelized and alleviated

  13. 13

    Let cake cool for an hour in baking sheet / cake form on rack

  14. 14

    Take out of pan and loosen lining yet leaving it on

  15. 15

    Prick top with tooth pick several times

  16. 16

    Pulverize your sugar (or use store bought powdered)

  17. 17

    Stir in lemon juice bit by bit

  18. 18

    Sprinkle in lemon peel

  19. 19

    When right consistency, glaze cake

  20. 20

    Let glaze set for at least 15min

  21. 21
