Sai bhaji is a very nutritious staple food of Sindhis. It's a combination of mostly 5 types of green leaves: Spinach, methi, dil,sour spinach and corianderleaves, cooked along with some Daal, tomatoes and various spices and generously seasoned with garlic. This main dish is served with rice and couple of side dishes. For lunch I have Sai bhajhi, rice, mixed capsicums and fried potatoes and ladies fingers, Papad and curds.

Ingredients

30 minutes
3 servings
  1. For Sai bhaji
  2. 1 bunchSpinach
  3. 1/2 bunchmethi leaves
  4. 1/2 bunchsour spinach
  5. 1/2 bunchcoriander leaves
  6. 1carrot
  7. 1 cupdaal(any yellow)
  8. 3large tomatoes
  9. 2green chillies
  10. as per tasteSalt, red chilli powder and turmeric
  11. 3 tspoil
  12. 6 clovesgarlic finely chopped
  13. For Mixed capsicums
  14. 1each of green, yellow and red capsicum
  15. 5 clovesgarlic
  16. 1green chilli
  17. 1/2 inchginger
  18. Salt and red chilli powder as per taste
  19. 1 tspcoriander powder
  20. 1 tspgaram masala
  21. 3potatoes
  22. 250 gmsladies fingers
  23. Dry spices mix: salt, turmeric, red chillipowder, Cummin powder,
  24. Amchur powder and garam masala
  25. 1 cuprice

Steps

30 minutes

    Sai bhaji: Wash and finely chop all the greens and onions. Soak daal.

    Heat a cooker and add 2tsp oil, Half of chopped garlic and chopped onion. Fry for 5 minutes. Add all the green leaves, carrots, daal and tomatoes. Fry for 3 minutes. Add all the spices, ginger and chillies. Add 1 cup water cover and cook till 4 whistles.

    Open the cooker and mash the vegetables with a hand blender or wooden crusher.

    Season it with 2tsp oil and remaining garlic.

    Heat a non stick pan. Add 1 tsp oil, chopped garlic and chopped capsicums. Stir fry for 5 minutes. Add salt, ginger and spices.

    Remove and serve as a side dish.

    Boil Potatoes. Peel them and cut into wedges. Deep fry them till crisp.Wash and dry ladies fingers. Remove tops and deep fry them till crisp. Remove on an absorbent paper and sprinkle all the spices and serve immediately.

    Boil rice with 2 and a half cup water and salt.

    Serve every thing together song with fried Papad and curds.
