Boil a pan of water for the pasta. De-seed chile and dice finely. Cut the bell pepper roughly and dice the onion.

At a medium heat fry off the onion, chili and garlic until onions are lightly golden then add the bell pepper.

Once the bell pepper is tender with a bit of crunch, add the tomato and a few dashes of chipotle sauce to taste. Season with pepper as necessary.

Once the sauce is cooked to your liking, drain the pasta and add to sauce.

Serve with a drizzle of the chipotle sauce. Enjoy!
