Ingredients

  1. Dressing
  2. 3/4 tspAsian Chili Powder or Cayenne
  3. 1Zest of Lemon
  4. 1 tbspFreshly Squeezed Lemon Juice
  5. 1Inch Section Ginger, peeled and grated
  6. 1/4 cupRice Vinegar
  7. 1/3 cupSoy Sauce
  8. 1 tbspHoney
  9. 1 tbspToasted Sesame Oil
  10. 3 tbspOlive Oil
  11. Noodles
  12. 9 ozDried Noodles (any noodles really)
  13. 7 ozFresh Mushrooms (any kind) (enoki, shimeji, sliced button, sliced shitake)
  14. 1 1/2 tbspButter
  15. 1 tbspMinced Fresh Herbs (parsley, green onion, cilantro or basil)
  16. 1 tbspSesame Seeds

Steps

  1. 1

    Make Dressing by combining all ingredients, except sesame oil and olive oil in food processor or hand blender. Run blender for a few seconds until all ingredients are combined. With machine running, drizzle in oils.

    In a pot cook dried noodles. Drain. Set aside.

  3. 3

    Heat frying pan over high heat. Add butter and when it starts bubbling, add mushrooms. Sauté mushrooms for 2 minutes.

  4. 4

    In large bowl, toss cooked noodles w/mushrooms, herbs, sesame seeds and some of the dressing (to taste).
