  • Main
  • 1whole chicken
  • Marinade
  • 1/4 cupKetchup
  • 1/4 cupOlive oil
  • 6 cloveGarlic
  • 2 tspcinnamon
  • 2 tspnutmeg
  • 1/2 tspGinger powder
  • 2 1/4 cup (18 oz)Pineapple juice
  • 2/3 cupSoy sauce
  • 3Scallion
  • 6 Sprigsthyme
  • 1 tbspground allspice
  • 1 1/2 tbspcider vinegar
  • 1 cupBrown sugar
  • 1 tspBrowning
  • 2Scotch bonnet peppers
  • 3 tbspCornstarch

Steps

1 hour 30 mins
  1. 1

    Cut up scotch bonnet peppers

  2. 2

    Add all ingredients to pot

  3. 3

    Mix corn starch and a small amount of sauce in bowl

  4. 4

    Add cornstarch to bowl

  5. 5

    Cook on medium high heat for 10 minutes

  6. 6

    Cut up chicken into four pieces

  7. 7

    Wait till marinade cools and add chicken and marinade into bowl

  8. 8

    Place marinade and chicken into refrigerator for one day

  9. 9

    Grill chicken on indirect medium heat for 30 to 45 minutes

  10. 10

    Chop up chicken and use leftover marinade for sauce
