Ingredients: 3 cooked ears of corn, kernels sliced off (or 2 cups frozen corn or 1 (15 ounce) can of corn, drained); 1 (15 ounce) can pinto beans, drained; 1 Roma tomato, chopped and seeded; 1 (15ounce) can black beans, drained; 1 avocado, peeled and chopped; 1 jalapeno pepper, seeded and chopped; 1 green or red bell pepper, seeded and chopped; 1/2 cup chopped, fresh cilantro; 1 tbsp olive oil; 1 tsp salt; 1 lime, juice of; 1 to 3 teaspoons chili powder. (start with 1 teaspoon, taste, and add more if desired); 1/4 to 1/2 cup chopped onion (I use white, but you can use green) I use closer to 1/2 cup of a sweet onion.

Combine all of the ingredients in a serving bowl and mix well.

Tastes even better if you refrigerate and cover it a few hours before serving.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
