Ingredients

30 mins
  1. 3cooked ears of corn, kernels sliced off (or 2 cups frozen corn or 1 (15 ounce) can of corn, drained)
  2. 1(15 ounce) can pinto beans, drained
  3. 1Roma tomato, chopped and seeded
  4. 1(15ounce) can black beans, drained
  5. 1avocado, peeled and chopped
  6. 1jalapeno pepper, seeded and chopped
  7. 1green or red bell pepper, seeded and chopped
  8. 1/2 cupchopped, fresh cilantro
  9. 1 tbspolive oil
  10. 1 tspsalt
  11. 1lime, juice of
  12. 1to 3 teaspoons chili powder. (start with 1 teaspoon, taste, and add more if desired)
  13. 1/4to 1/2 cup chopped onion (I use white, but you can use green) I use closer to 1/2 cup of a sweet onion.

    Combine all of the ingredients in a serving bowl and mix well.

    Tastes even better if you refrigerate and cover it a few hours before serving.

    Serve with tortilla chips.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
