preheat oven to 400 degrees

Spray large casserole dish with cooking spray. Place scallops in dish

Heat 1\2 tablespoon olive oil in a non stick skillet. Add garlic and saute 2-3 minutes. Add white wine, vegetable stock, and lemon juice. Bring to a boil and cookuntil reduced by half. Add 1 tablespoon tarragon, sea salt, and pepper. Spoon over scallops in dish.

Gratin topping: In a small bowl, combinepanko bread crumbs, parsley, bacon crumbs, and 1/2 teaspoon olive oil, and distribute over dish. Bake 10-12 minutes or until toppkng is golden brown. ♥ :)
