Pumpkin, Carrot and Cucumber Salad.

Dice pumpkin into 1cm thick squares. Chop broccoli into florettes; discard the giant unedible base. Fry pumpkin, paprika and broccoli until cooked.

Slice carrot and cucumber 3-4mm thick. Place pumpkin and broccoli in bowl with carrot and cucumber.

Add lime juice to veg, stir through. Mix tarragon, coriander and garlic; stir through veg. Add cinnamon and ginger individually, stirring through every time. Season with salt and garnish with cranberries, tomatoes and parsley.
