Breakfast Cordon Bleu

Often times we end up with leftovers, usually A LOT of leftovers and sadly I'm the only one in the house that will eat leftovers...unless I jazz it up a bit by adding new ingredients and make it look different. I'm also a mom, with very active kids so I don't always get time to make a "real" breakfast. This is very quick and easy to make, PLUS it gets rid of the leftovers!

Cooking Instructions

Reheat leftover Cordon Bleu Muffin.
- 2
Pouch egg to you liking.
- 3
Once the egg is cooked, place ontop of reheated muffin. Sprinkle with parm and parsley!

Chicken Cordon Bleu is breaded and then fried. We want to skip the frying and bake ours instead. It takes what is otherwise a tedious recipe and simplifies it a bit. Or at least lets you skip the giant pot of oil and the inevitable cleanup.
