Ingredients

  1. 1 cupall-purpose flour
  2. 2 tbspcornstarch
  3. 1/2 tspbaking powder
  4. 1/2 tspbaking soda
  5. 1/2 cupwater for flour (ice cold water gives a better batter)
  6. 2 lbfresh haddock cubed
  7. Cracked chilli sea salt or plain sea salt
  8. 2inches of vegtable oil for frying

    Heat a pan of oil about 2 inches, and bring it up to around 325℉/340℉

  2. 2

    Cut haddock into bite size pieces, pat dry with kitchen paper.

  3. 3

    Mix flour, cornstarch, baking powder, baking soda, salt n pepper and cold water to make a smooth batter.

  4. 4

    Add haddock pieces to the batter and carefully put into heated oil around 5-6 pieces at a time so the oil doesn't cool down to much. If this happens the batter will be soggy. Fry for 4-5 minutes or until golden brown and crispy.

  5. 5

    Remove and drain well on kitchen paper, sprinkle immediately with chili salt on a warmed plate, continue until all of the fish is cooked and dig in

  6. 6

    This batter can be used with cod, catfish, tilapia and onion rings
