Ingredients

  • 2 mediumonion, chopped
  • 1trimmings from leg of lamb
  • 2 clovegarlic
  • 1/2 literred wine
  • 1/2 literbeef or lamb broth
  • 1 tbsptomato paste
  • 1/2 tspstarch
  • 1 piececarrot, chopped
  • 2 tbspred currant jelly

Steps

    Brown

    Add and slightly brown

  3. 3

    Deglace with

  4. 4

    Reduce slowly, about 2 hours, add drippings from leg of lamb

  5. 5

    Strain and add starch, if needed

  6. 6

    Salt and pepper to taste, add more currant jelly if too bitter.
