Ingredients

  1. 2 mediumonion, chopped
  2. 1trimmings from leg of lamb
  3. 2 clovegarlic
  4. 1/2 literred wine
  5. 1/2 literbeef or lamb broth
  6. 1 tbsptomato paste
  7. 1/2 tspstarch
  8. 1 piececarrot, chopped
  9. 2 tbspred currant jelly

Steps

  1. 1

    Brown

  2. 2

    Add and slightly brown

  3. 3

    Deglace with

  4. 4

    Reduce slowly, about 2 hours, add drippings from leg of lamb

  5. 5

    Strain and add starch, if needed

  6. 6

    Salt and pepper to taste, add more currant jelly if too bitter.
