Ingredients

6 servings
  1. 2 tspOlive oil
  2. 3 eachGarlic cloves, minced
  3. 3Jalapeños, chopped
  4. 1 tbspFresh lime juice
  5. 3/4 tspSalt
  6. 2 cupCooked rice
  7. 1 1/2 cupChopped onion
  8. 1/2 cupBell Pepper, diced
  9. 1 cupCrushed canned tomatoes, drained
  10. 2 tspChili powder
  11. 16 ozKidney Beans, drained
  12. 4 ozPepper jack Cheese, Shredded

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    Heat oil in skillet, add onion and garlic. Sauté 10 minutes. Add bell pepper, and jalapeños. Sauté for 3 minutes. Stir in tomatoes, lime juice, chili powder, and salt. Bring to a boil. Mix in beans and rice.

    Pour into a 2 quart casserole dish. Cook for 20 minutes. Top with cheese and cook until bubbly or melted.
