Slow Cooker Fiesta Farro, Bean & Butternut Squash Casserole

Add all ingredients but cheese and cilantro to crockpot. Mix together. Cook on high 2 1/2-3 hours, stirring occasionally, until liquid is mostly absorbed, farro is soft and butternut squash is fork tender. Stir cilantro in just before serving. Top each bowl or serving dish with desired amount of cheese. Makes 6-8 smaller portions or 4 very large portions.
