Wash the chicken well. Heat a clay tagine pot thoroughly, then add the olive oil. Immediately add the chicken, onion, and garlic. Add all the spices and mix well. Let everything cook together over low heat for about 30 minutes.

Stir occasionally so the spices soak into the chicken.

Add the green beans, since they take longer to cook than the potatoes. Let them cook with the chicken for a bit, then pour in 1/4 cup (about 60 ml) boiling water.

Arrange the potato quarters in the tagine as you like.

When you're done, add green or black olives (whichever you have) in the center. Sprinkle a little cinnamon and salt on top.

Cover the tagine.

From time to time, spoon some of the sauce over the potatoes so they get a nice color and flavor.
