warm oil in skillet on med-high. once hot, add chicken and cook for 5-10 min. until no longer pink and juices run clear. in last few min add garlic and onion.

once chicken is done, stir in carrot, lemon, broth, parsley, and rice. bring to a boil. then remove from heat, COVER, and let stand for 5 min. fluff with fork and serve
