Ingredients

2 servings
  1. 1as much as you can eat Pho (rice noodels)
  2. 10Shrimp (I used Black Tiger)
  3. 5stalks Green onions or scallions
  4. 1/2Red onion
  5. 50 gramsBean sprouts
  6. 1Straw mushrooms (or brown or white mushrooms)
  7. ★ For the soup ingredients:
  8. 500 mlWater
  9. 1 tbspWeipa
  10. 1/2 stalkLemon grass (or lemon juice)
  11. 1 tspDoubanjiang
  12. 2 tspFish sauce
  13. 1Sugar if it turns out spicier than desired
  14. ☆ For garnish:
  15. 1Cilantro (optional)

Steps

  1. 1

    Soak the pho in water. De-vein the shrimp and make a cut down the spine (so that it will open up when cooked).

  2. 2

    Chop the green onions or scallions, red onion, and straw mushrooms.

  3. 3

    Make the soup with the ingredients listed under the ★, add the seasonings, then add the pho and chopped ingredients.

  4. 4

    Garnish with cilantro, then serve.
