Cut alittle over halfway into center of pork loin, then move knife about half inch up from where the center cut ends, and make two more cuts halfway into each side of pork loin.

Stuff roasted tomatoes into all 3 cuts into pork, add the feta, and close pork tightly

Tightly tie pork loin together with twine.

Put pork into oven until browned about 30mins

Meanwhile

Drain and rinse Can Tomatoes

In bowl add Italian seasoning, Garlic, Can Tomatoes

Once pork has browned pull out of oven top with Tomato blend, add half of shredded parmesan.

Lower oven temperature to 300°

Add water alittle bit of cooking wine, cover, and bake for another hour and a half
